Ingredients:
For the cupcakes -
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
3/4 cup granulated sugar
1/2 tsp salt
1/2 cup vegetable oil
1/2 cup buttermilk
2 egg whites
1 tsp peppermint extract
1/2 tsp vanilla extract
For the White Chocolate Buttercream Frosting -
3/4 cup unsalted butter
1/2 cup white chocolate chips
2 tbsp heavy cream
3 cups powdered sugar
1 tbsp heavy cream
1 tsp peppermint extract
Holiday Sprinkles, optional
Hershey Kiss, peppermint striped
Directions:
To a large bowl, add in the egg whites, vegetable oil and sugar. Mix until thoroughly combined. To a smaller bowl, gather up all of the dry ingredients. To the main mixing bowl, alternate adding in the dry ingredients and buttermilk, mixing well between each addition. Then add in the vanilla extract and peppermint extract. Mix until combined.
To a standard size cupcake pan lined with liners, evenly distribute the batter between all 12 cupcake liners. Into a preheated oven at 350 degrees for 16 - 18 minutes depending on your oven. Let the cupcakes cool completely before frosting.
Make the frosting. To a small microwave safe bowl, add in the white chocolate chips and 2 tbsp of heavy cream. Microwave for 1 minute, stirring every 20 seconds so the chocolate doesn't burn or start to seize. Stir until melted and then set that off to the side to cool down.
To a large mixing bowl, add in the butter and mix until fluffy. Add in the cooled chocolate and mix until combined. Add in the powdered sugar in two batches, mixing well between each addition. Lastly add in the peppermint extract and 1 tbsp of heavy cream. Mix until nice and smooth, scrapping the sides of the bowl as needed. Transfer your frosting to a piping bag fitted with an M1 piping tip.
Assemble the cupcakes. Grab a cupcake and pipe on a single layer of frosting. Add a Hershey kiss and any holiday sprinkles. Enjoy!
