Instant Tomato sauce

This is a versatile sauce that can be used as a base for many Indian dishes.
Ingredients:
1 Kg large tomatoes, chopped
1 teaspoon black salt
1 teaspoon Roasted cumin powder
1/6 teaspoon red chili powder (adjust to taste)
Salt to taste
Instructions:
Add chopped tomatoes and cook it for 10 to 15 min on low flame. Stir it well after every 5 to 7 min. Once you see tomato cooked it well or cook it for 15 to 20 min on low flam.
Now cool it down and after that blend it well. Filter it well to remove seeds and peal of tomato. Cook it again to reduce water in it. Add jaggery or sugar as per your taste or 250 gm.
Add 1 teaspoon black salt
1 teaspoon Roasted cumin powder
1/6 teaspoon red chili powder (adjust to taste)
Salt to taste
Now we need to do plate test put 1 teaspoon sauce on plate and tilt it vertically. If you see water get separately then needs to cook more, if not then cook it for few min.
Save it in glass jar. Sauce has 1 month shelf life.
