This salad features a very classic lineup of ingredients: beets, goat cheese, and walnuts. A shallot vinaigrette, seasoned with fresh orange juice, always a nice match for beets, brings it all together.
In this video, the beets are steam-roasted but in the corresponding recipe, I offer a method for salt-roasting beets, which is another method I love for cooking beets.
