Steps:
Prepare Ingredients: Soak kasuri methi in warm water for a few minutes to soften. Boil 3 potatoes until soft, peel, and cube them.
Temper Spices: Heat oil in a pan, add a pinch of asafoetida and ½ tsp cumin seeds, let them splutter. Add coarsely crushed garlic and chopped green chilies, sauté until fragrant.
Add Dry Spices: Stir in ½ tsp turmeric powder, ½ tsp coriander powder, ½ tsp red chili powder, and salt to taste. Mix well.
Add Potatoes: Add the cubed boiled potatoes to the pan and mix to coat with the spices.
Add Methi: Pour in the soaked kasuri methi along with its water. Mix thoroughly.
Cook Sabji: Cover and cook on low flame for 4-5 minutes, stirring occasionally. Check if potatoes are tender and flavors are blended.
Garnish and Serve: Garnish with fresh coriander leaves. The sabji is ready to serve hot.
