"Étoile," a new Amazon Prime series about two struggling ballet companies in New York and Paris, is the latest comic-drama from Amy Sherman-Palladino and Dan Palladino, the Emmy-winning couple behind such hits as "Gilmore Girls" and "The Marvelous Mrs. Maisel."
