Try this totally different curry using pumpkin with mustard as the main ingredient
Ingredients
4 cups chopped pumpkin/ squash
1 tbsp oil/mustard oil
1/2 tbsp panch phorun
Pinch of asafoetida (hing)
1 bay leaves
2 whole chili
1/2 tsp turmeric
1/2 tsp coriander powder
1/2 tsp amchur (dry mango powder)
1/2 cup chopped cilantro
Grind together:
1 tbsp black mustard seeds (rai)
1.5 tablespoons water
METHOD:
1. Heat oil. Add the bay leaf,panch phorun and asafetida.
2. Once the spices splutter. Add 2-3 whole chili and fry.
3. Add the chopped pumpkin and mix well.
4. Cook for about 15 minutes until the pumpkin is soft. Add turmeric, coriander powder and salt to taste.
5. Cook for a few minutes and then add the dry mango powder.
6. Mash the pumpkin and take off the heat.
7. Let the pumpkin dish cool.
8. Add the ground mustard mixture and mix well.
9. Serve with rotis or rice.
Note: Panch phoran is an equal mixture of fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed
