I thought I knew how to make chocolate truffles

Thank you for watching the video! This was my attempt of making 4 different gluten free and dairy free chocolate truffles. I have lots of changes I would make when I do this again. Recipe:
Chocolate Covered Peanut Butter and Rice Crispies
½ Cup Peanut Butter
3 T Softened Dairy Free Butter
1 Cup Powdered Sugar
Semi-Sweet Chocolate Exterior with PB Drizzle

Chocolate Covered Red Velvet Cookie Dough
1/4 cup Dairy Free unsalted butter softened
1/4 cup granulated sugar
1/4 cup brown sugar
1 tablespoon oat milk
1 teaspoon vanilla extract
1/2 tablespoon red food coloring
2/3 cup all-purpose flour
1 tablespoon unsweetened cocoa powder
1/4 teaspoon salt
Semi-Sweet Chocolate Exterior with White Chocolate Drizzle

White Chocolate Covered Pumpkin
1/4 cup salted dairy free butter
1 cup brown sugar
1/2 cup pumpkin puree
1 1/2 cups all-purpose flour, heat treated
1/4 tsp salt
1/2 tsp pumpkin pie spice
1/2 cup powdered sugar
Dairy free mini chocolate chips
White Chocolate Exterior

White Chocolate Covered Oreos
24 Blended Oreos
4 Oz Vegan Cream Cheese
2 T Dairy Free Salted Butter
White Chocolate Exterior with chocolate drizzle
