ánh Tét is a traditional Vietnamese sticky rice cake 🎋 commonly enjoyed during Lunar New Year (Tết). To make it, start by soaking glutinous rice overnight until soft. Meanwhile, prepare the filling by seasoning mung beans with a bit of salt and pepper, and cooking pork belly with fish sauce, garlic, and shallots until flavorful 🍖. You can also marinate the pork overnight for a deeper taste. Drain the rice and mix it with a little salt and coconut milk for richness. To assemble, lay banana leaves (softened by steaming or heating) on a clean surface, and place a layer of rice in the center. Add a line of mung bean paste and marinated pork, then cover with another layer of rice. Roll tightly into a log and tie securely with strings or banana leaf strips 🎍. Boil the cakes in a large pot of water for about 6–8 hours, making sure they stay submerged. Add hot water as needed. Once cooked, let them cool before slicing. The final product is a flavorful, savory cake with layers of rich pork, creamy mung beans, and sticky rice, all infused with the aroma of banana leaves 🌿.
