Fresh Pasta with "No Sauce" With Chef Rob Gentile!!!

For our SEASON FINALE, we have a real, professional chef in the kitchen. Chef Rob Gentile recently opened Stella West Hollywood in Los Angeles, and today he teaches Ryan how to make the simplest item on the menu- Clarice's Pasta with No Sauce. Rob's daughter Clarice can actually make this and now we all can, too. ENJOY!
RECIPE: Fresh Pasta with "No Sauce"
Ingredients:
Water, semolina flour, salt, pepper, parmesan cheese, butter.
Tools: Kitchen Scale, grater, pasta rolling boards. (you can also use your grater or a fork for this part!)
Directions:
To make the dough, measure 500 grams of semolina flour into a bowl on the kitchen scale. Then add 250 grams of water, noting the amount on the kitchen scale. Mix the ingredients together, and a ball will begin to form.
Using the palm of your hand and rotating the bowl as you go, knead the dough thoroughly together. Wrap in cling wrap and set aside for a few minutes. If you make ahead of time, you can put this in the fridge, you can even freeze it to have on hand whenever you like. After the dough has rested a bit, unwrap and cut off a small section.
To roll the pasta, roll out that section of dough into long ropes. Then cut into smaller pieces. Using the pasta boards (these were from Etsy) press each small piece of dough into the roller and roll along the board to form the pasta of your choice. You can also use a fork for this, or roll along the side of your cheese grater. Continue until you have all your pieces of pasta rolled out! Place these on a parchment paper lined baking sheet and occasionally sprinkle with a dash of semolina flour to keep the pastas from sticking to each other.
Bring a pot of water to boil, generously seasoning the water with salt. Meanwhile, grate the block of parmesan on the smallest side of the grater, creating a fine powdery consistency.
Then cook your pasta until al dente. Scoop the pasta out of the water into a bowl. Add a few tablespoons of butter to the bowl, sprinkle some grated parmesan cheese and a scoop of pasta water. Mix the pasta and the ingredients together aggressively to make the sauce form in a creamy consistency. Add more cheese if you like until the pasta has the consistently you or your kids will love.
If you want, add some fresh cracked black pepper onto the pasta and ENJOY!
