萵筍炒肉絲Stir-Fried Shredded Pork with Chinese Lettuce
今天和大家煮一個小菜Today, we Cook a simple dish
材料簡單: 大萵筍一條, 瘦豬肉一塊 薑粒蒜蓉 辣椒絲The ingredients are simple: one piece of Chinese lettuce, one piece of lean pork, minced ginger and minced garlic, shredded pepper
首先處理萵筍For Chinese Lettuce
把萵筍前端的菜葉部分切掉Cut off the top part (The leafy part) of the lettuce
菜葉部分以後可用作其他用途The leafy part can be used later for other purposes
萵筍的尾端 比較粗糙, 我們也切掉The end of the lettuce is rough, we also cut it off
去皮, 去掉所有白色的部分Peel and remove all white parts
直至見到青綠色的部分Until you see the green part
然後切片then slice
再切成絲Shredded
用鹽一茶匙, 醃萵筍With a teaspoon of salt, pickle lettuce
醃15分鐘marinate for 15 minutes
之後你會見到萵筍釋出很多水份Then you'll see the lettuce release a lot of water
草青味就會被去除Grass smell will be removed
然後用清水沖洗兩三次Then rinse with water two or three times
把鹽份去掉so as to remove the salt
切豬肉, 要逆紋而切To cut pork, cut against the grain
如果是橫紋, 我們就直切If it is a horizontal grain, we cut it straight
把豬肉切成一片片, 然後再切條Cut the pork into slices and then into strips
清洗豬肉cleaning pork
用一湯匙豆粉with a tablespoon of soy flour
加入清水add water
不停攪拌keep stirring
然後用清水沖洗兩三次Then rinse with water two or three times
豬肉就會很乾淨pork will be clean
過濾豬肉表面的水份Filter the water on the surface of the pork
醃豬肉, 用雞粉 一茶匙, 生抽一茶匙, 蠔油一茶匙, 糖半茶匙, 豆粉一茶匙, 加水(約一湯匙), 麻油一茶匙Marinate pork, 1 teaspoon of chicken powder, 1 teaspoon of light soy sauce, 1 teaspoon of oyster sauce, 1/2 teaspoon of sugar, 1 teaspoon of soy flour, add water (about 1 tablespoon), 1 teaspoon of sesame oil
醃15分鐘marinate for 15 minutes
所有材料已經準備好All ingredients are ready
用少許油炒萵筍Saute the lettuce in a little oil
輕輕把萵筍炒一下就好Lightly fry the lettuce
把萵筍撈起pick up the lettuce
用少許麻油with a little sesame oil
加入薑粒add ginger
聞到有薑味, 就可以加入肉絲If you smell ginger, you can add shredded pork
慢慢炒fry slowly
看見肉絲開始變淺色, 就可以加入蒜蓉When you see the shredded pork starts to lighten in color, you can add minced garlic
聞到有蒜蓉味, 大部分水已經蒸發smells garlic, most of the water has evaporated
加入蠔油(約 一茶匙) Add oyster sauce (about 1 teaspoon)
加糖半茶匙1/2 teaspoon of sugar
這樣, 調味汁就會黏在肉絲表面This way , the sauce will stick to the surface of the shredded meat
再放入萵筍add lettuce
全部炒勻Stir well
加入少許辣椒絲(多少隨意) Add a little chili shreds (how much is optional)
很簡單, 很快就煮好It's easy and cooks quickly
萵筍很爽口, 肉絲很軟熟The lettuce is very refreshing, the shredded pork is very soft and cooked
一家大小都會喜歡吃The whole family will love to eat
