Fried chicken is a dish consisting of chicken pieces which have been coated in a seasoned batter and pan-fried, deep fried, or pressure fried. The breading adds a crisp coating or crust to the exterior of the chicken while retaining juices in the meat. Broiler chickens are most commonly used.
Today, I am going to share with you our style of cooking by way of "brining" the meat before deep frying and we call this dish Fried Chicken - Cagayan de Oro Style. Please watch the video until the end for you to understand the fully purpose of brining.
