It's a cold January and I'm keeping us fed and warm with fresh bread. Not just any fresh bread mind you. This is fresh ground einkorn sourdough sandwich bread. The nutritional value of any flour drops by 85-90% just four days after milling. I've used the research done on this to guide my decision to go back to milling much of our own flour. It's so good, fibrous and so filling. Yes, after a couple weeks I've noticed the kids don't ask for as many snacks!
