My first encounter with TONJIRU goes back to 2016 at a restaurant in Toronto called Kingyo. (They are back and rebranded as Kingyo Fisherman's Market♡) Typically they'd serve miso soups with meals in Japanese restaurants, as my soup arrived and surprisingly it wasn't JUST miso soup but tonjiru. Upon my first sip, I was in awe with the depth of flavours in this newly introduced miso soup! That unforgettable earthy taste and crunch from the burdock root (it is also a powerhouse of antioxidants), the tenderness of the pork, chewiness of the konnyaku and sweetness from the vegetables blend in perfect harmony, the soup was extremely nourishing.

There are MANY variations of miso soup, why not create one that suits your tastebuds? 😌

I used bacon slices and shallots instead. (whatever I could find at home) Opted out a few ingredients, skipped the blanching of konnyaku (which is to help remove the odour), and the outcome?

Still DELICIOUS!


Great pairings with a big bowl of rice or sushi. Even on its own!
