Today, I'm introducing a Sushi restaurant where you can enjoy aged Sushi at a reasonable price!!
This is recommended if you come to Japan and want to enjoy aged Sushi at a reasonable price.
I will write down my impressions of Sushi toppings and appetizers that particularly made an impression on me.
①Smoked mackerel pickled in salted rice malt
This was amazing. The combination of the smoked flavor, the fat of the mackerel, and the Sushi rice was very delicious!!
Cherry wood chips were used for smoking. Because the smoked flavor is strong, the Sushi toppings are marinated in salted rice malt to prevent them from being overpowered. One day, I will try making smoked Sushi!!
②7-day-aged Sea bream
I felt the rich softness that comes from aging the most. It also goes well with Sushi rice's red vinegar.
③Miso soup made with fish stock
Red miso was used in the miso soup.If it only had the flavor of red miso , the miso soup would be bland. Adding fish broth to the miso soup gave it a well-balanced flavor that I felt was delicious.
