Try Mediterranean Eggplant Meat Rolls—tender baked eggplant wrapped around a juicy beef filling, swimming in tomato sauce and melted mozzarella. These Mediterranean Eggplant Meat Rolls are easy, saucy, and perfect for a healthy weeknight dinner!
Ingredients (serves 4):
2 large eggplants (sliced lengthwise)
350 g ground beef
1 small onion, 2–3 garlic cloves, finely chopped
½ cup cooked rice (optional)
1 cup tomato passata/sauce
1–1½ cups shredded mozzarella
2 tbsp olive oil, 1 tbsp lemon juice
1 tsp paprika, 1 tsp dried oregano, ½ tsp cumin, salt & pepper
Fresh parsley for garnish
Steps:
1. Brush eggplant slices with olive oil; roast/grill at 200°C/400°F for 12–15 min until flexible.
2. Mix beef, onion, garlic, rice (opt), paprika, oregano, cumin, salt & pepper.
3. Spread tomato sauce in a baking dish. Place filling on each slice, roll, and set seam-side down.
4. Whisk olive oil + lemon (the “special dressing”), drizzle, top with mozzarella.
5. Bake at 190°C/375°F for 20–25 min until bubbly and golden.
6. Garnish with parsley; serve with a simple cucumber–tomato salad.
