In this week's episode the whole gang are entering the local horticultural show with veggies, fruits, flowers, cakes and jams. I'm trying to start early - but the weather (and my arches!) have other plans... Will I get everything ready in time? Will I win best in show? Will my cake be a laughing stock?? Only one way to find out... It is also the end of our #AugustEatIn for another year and there's one last recipe segment. Oh and finally the results of the Charlotte second earlies potato experiment too - this one might surprise you...

Vegan Victoria Sponge:
300ml plant based milk
Squeeze of lemon juice
250g self raising flour (I added 1/4 tsp of baking powder too because my flour seemed a bit poor)
40g vegetable oil
100g sugar
Vanilla essence (optional)
Pinch of salt
Mix the milk and lemon and allow to sit and curdle slightly. Sift flour and salt. Add all the other ingredients to the milk and whisk lightly. Fold wet into dry. Bake in two 8" sandwich tins at 180C for 25 mins until lightly golden. Sandwich with raspberry jam and sprinkle with caster sugar.
I much prefer using this recipe as a base for adding other flavours/ingredients (e.g. coconut) and baking in a LOAF TIN at 180c for 50 minutes. Seems to work better than the sandwich tins. I think the rise comes with the longer bake...?
Beetroot Brownies (improved recipe!):
2 small beets, pulp from juicer
180g chickpea flour
125g self-raising flour
100g coconut sugar
50g coconut syrup
80g cocoa powder
1 tsp baking powder
1/2 tsp salt
75g walnuts
200ml plant based milk
40g almond butter
25g vegetable oil
60g silken tofu
40g chocolate spread
Mix together dry ingredients. Blend wet ingredients and walnuts and beetroot. Add wet to dry. Bake for 25 mins at 180C. Allow to cool in tray.
