面皮: 中筋面粉 300克,清水 160克
肉馅: 猪肉馅 320克,葱姜末 适量,酱油、盐、花椒粉 适量

Ingredients:
Wrapper: 300g all-purpose flour, 160g water
Filling: 320g ground pork, minced green onion & ginger, light soy sauce, salt, Sichuan pepper powder
Vegetables: 100g fennel, 5 pieces dried black wood ear mushrooms (rehydrated)
Instructions:
Make the Dough: Combine 300g flour with 160g water. Mix with chopsticks until shaggy, then knead by hand into a smooth dough. Cover and let it rest for at least 30 minutes.
Make the Filling - THE SECRET STEP! Season the 320g ground pork with soy sauce, salt, pepper, and minced aromatics. Here's the key: slowly add 80g of water (or ginger-scallion water) to the pork, adding it in 4 separate batches. After each addition, vigorously stir in one direction until the meat fully absorbs the water. It will become paste-like, sticky, and should cling to your spoon.
Combine with Veggies: Drizzle some sesame oil into the meat and mix. This "locks in" the moisture. Then, add the chopped fennel and wood ear mushrooms, and mix gently.
Assemble: Roll the rested dough into a log, cut into small pieces, and roll each into a round wrapper (thinner edges, thicker center). Fill with a generous amount of filling and seal them tightly using your preferred method.
Cook: Bring a large pot of water to a rolling boil. Add the dumplings and gently nudge them to prevent sticking. Cook until they all float to the top and look plump. Cook for 1-2 more minute, then drain.
