[READ ME] Hey food family! After countless messages and comments about the clarity of my previous oxtail video... as promised, here is a remake. Not sped up no music during the instructional parts as well as another caribbean style of making it. Haitian food is probably my front runner when it comes to spices and flavor. Don't get me wrong, I do love my Bahamian and Jamaican spice blends and cooking techniques, but when I tell you, wait before you come to a conclusion... wait. Lol. A most dear friend of mine who is Haitain has turned my head completely! She has got to be the best cook that I have ever met, and I have been in the culinary industry for over 13 years. Working for various luxury hotels, michelin star chefs, celebrity chefs, james beard award winning chefs, food network chefs, and even some of bravo's top chefs... Not one of them and not one of their dishes has ever had the impression on me as this young lady (Mrs. Denis, you know you can thrown down with your heart, soul, and the kitchen sink, lol). I can not speak for all of Haiti or even for all Haitian food, I just know what was coming out of her kitchen was offensively delicious.
