simple & authentic Rashmalai recipe you can easily make at home 🍨
🧁 Ingredients
For Chhena (Paneer balls)
Full cream milk – 1 litre
Lemon juice / vinegar – 2 tbsp
Ice cubes – ½ cup
Water – as needed
For Sugar Syrup
Sugar – 1 cup
Water – 4 cups
Cardamom – 2 pods (crushed)
For Rabri (Ras)
Full cream milk – 1 litre
Sugar – 4–5 tbsp (adjust to taste)
Cardamom powder – ½ tsp
Saffron – 10–12 strands
Chopped almonds & pistachios – 2–3 tbsp
👩🍳 Method
🌸Step 1: Make Chhena
Boil 1 litre milk.
Switch off flame, add lemon juice slowly.
Milk will curdle – add ice cubes.
Strain using muslin cloth, wash with cold water.
Hang for 30 minutes (no water, but soft).
Knead chhena till smooth.
Make small flat balls.
❤️Step 2: Cook in Sugar Syrup
Boil 4 cups water + 1 cup sugar + cardamom.
Add chhena balls.
Cover and cook for 15 minutes on medium flame.
Balls will double in size.
Take out and gently squeeze excess syrup.
💕Step 3: Prepare Rabri
Boil 1 litre milk, reduce to ½ quantity.
Add sugar, cardamom powder, saffron.
Add chopped dry fruits.
Simmer till slightly thick.
Step 4: Assemble Rashmalai
Add squeezed chhena balls into hot rabri.
Let it soak for 2–3 hours.
Chill before serving.
🌸 Tips for Soft Rashmalai
Use full cream milk only
Do not over-squeeze chhena balls
Sugar syrup must be boiling before adding balls

Serve chilled, garnish with saffron & pistachio.
