The crockpot does almost all the work. Your job is very minimal. So easy & mouth watering.
Okay friends, I’m taking you back to my roots.
Kadu in English means soup. This classic Guam recipe is rich, savory & cooks itself. Serve it over steamed rice with finadene (Chamorro condiment) on the side.
Prep Time: 10 min
Cook: 15 min (10 minutes to brown oxtails, 3 -5 minutes sauté onions & garlic)
6 hours on low (crockpot)
Ingredients
2.5 lbs oxtails (rinse & pat dry)
1 russet potato
1/2 onion
2 cloves garlic
2 tbsp oil - I used olive
1 tsp black pepper
1 tsp garlic powder
1 tsp ginger powder
baby bok choy - preference (I used 8)
1 cup coconut milk
6 cups water
3 beef bouillon or 3 tsp beef bouillon
*brown oxtails on each side for 5 minutes prior to crockpot - this maximizes flavor
*saute onion & garlic for 3 minutes before transferring to the crockpot
*add bok choy the last 5 minutes - it cooks fast
*serve oxtail kadu with fina'denne' & steamed rice
