I made a chocolate bonbon gift box for my son's daycare teachers, so I thought it was the perfect chance to show you how I make bonbons at home.
Here are the ganache recipes I used for the bonbons,
Hazelnut ganache
Milk chocolate 90g
Dark chocolate 40g
Heavy cream 85 g
Hazelnut paste 45 g
Unsalted butter 20g
Pinch of salt
Passion fruit ganache
Passion fruit puree 100g
Heavy cream 30g
Glucose syrup 10g
Milk chocolate 140g
Unsalted butter 25g
Caramel
Sugar 55g
Trimoline 15g
Glucose 30g
Heavy cream 60g
Salt 0.5g
Milk chocolate 80g
Butter 30g
Raspberry ganache
White chocolate 100 g
Heavy cream 30g
Raspberry puree 30g
Glucose syrup 5 g
Unsalted utter 10g
Vanilla ganache
White chocolate 150g
Heavy cream 80g
Unsalted butter 12g
1/2 Vanilla bean
Take half of the vanilla ganache and add Matcha powder 2~3g and make Matcha ganache.
✨For tempering white chocolate, first melt it to approximately 40-45°C (104-113°F), then cool it down to 28-29°C (82-84°F) using fresh chocolate.
