脆蝦餃
材料:
急凍蝦仁30隻
餃子皮(圓形)適量
芫荽一棵
辣椒仔一隻
生粉
麪粉
處理:
1. 蝦仁,清水解凍。
2. 芫荽,切粒。
3. 辣椒仔,去籽,切粒。
4. 蝦仁已解凍,擎乾水,加入粗鹽一茶匙乸2分鐘,去除雪味及腥味,清水沖洗乾淨,擎乾水,廚紙索乾。
5. 取出16隻蝦仁,放碗內。
6. 餘下的蝦,菜刀拍鬆,刴幾下,放碗內。
7. 蝦膠,加入一半的芫荽碎。(不喜歡食芫荽的朋友,就不需要加入它。)
8. 蝦仁及蝦膠,加入調味料:
a. 胡椒粉適量
b. 鮑魚汁1/4茶匙
撈勻。
9. 一塊餃子皮,放上適量餡料,及2隻蝦仁,在餃子皮四個角,加入少量水分,每兩隻角黏好,然後再將每兩隻角再黏在一起,放好在碟上。
烹調:
1. 大火在鑊內燒熱油一湯匙。
2. 餃子排好在鑊內,煎一分鐘,轉慢火。
3. 在碗內加入生粉半湯匙及麪粉半湯匙,加入清水100毫升,攪勻。
4. 在鑊內加入一半份量的生粉及麪粉水芡,冚蓋2分鐘,蝦轉橙色就表示熟透。
5. 脆漿已煎至金黃色,整塊脆皮,放在碟上。
6. 灑上芫荽碎。
7. 伴以紅醋食用。
8. 完成,可享用。
Crispy hargow
Ingredients:
Frozen shrimps 30 Nos.
Dumpling sheets (round) appropriate amount
Coriander 1 No.
Chili 1 No.
Tapioca starch
Rice flour
Preparation:
1. Shrimps, defrost in tap water.
2. Coriander, dice in cubes.
3. Chili, remove seeds. Dice in cubes.
4. Shrimps have been defrosted, drain. Add in 1 tsp of cooking salt, season for 2 minutes, to remove unpleasant smells and add some salty tastes to them. Rinse thoroughly. Drain. Dry with kitchen towels.
5. Take 16 shrimps, put in a bowl.
6. The remaining shrimps, beat well with chopper, lightly chop. Put in a bowl.
7. The shrimp paste, add in half of the coriander cubes. (Or if those do not like the coriander, just ignore it.)
8. The shrimp and shrimp paste, add seasoning:
a. Pepper appropriate amount
b. Abalone sauce 1/4 tsp
Mix well.
9. A dumpling sheet, put appropriate amount of ingredients, and 2 shrimps. At the 4 angles of the sheet, add in little water. Every angle is to be sticked well. Then put 2 angles sticked together. Put on plate.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. The dumplings, put in rows in the wok. Fry for a minute. Turn to low flame.
3. Put 0.5 tbsp of tapioca starch and 0.5 tbsp of rice flour in a bowl. Add in 100ml of water, mix well.
4. Add in half of the tapioca and rice flour sauce in the wok. Cover it up for 2 minutes. Once the shrimps turn orange, which means they have been cooked well.
5. Crispy coating has been fried into golden yellow, the whole crispy thing, put on plate.
6. Put coriander cubes on top.
7. Put red vinegar on side.
8. Complete. Serve.
This hargow, is to be prepared in new method. Crispy and crunchy, it is with homemade ingredients. Follow the steps, you can make one too.
