🥣Ingredients: MILLET CURD RICE
1/2 cup millets (any variety like foxtail millet, barnyard millet, or little millet)
1.5 cup plain yogurt (curd)
1/4 cup Milk
1 tablespoon oil
1 teaspoon mustard seeds
1/2 teaspoon jeera/cumin seeds
1 teaspoon split urad dal (black gram dal)
1 teaspoon chana dal (split Bengal gram)
1 Red chilli broken
2-3 green chilies, finely chopped
1-inch piece of ginger, finely grated
A pinch of asafoetida (hing)
Few curry leaves
1-2 tablespoons chopped cilantro (coriander leaves)
Salt to taste
Water - 1+1/4 cup for cooking

🥣Ingredients(serves: 2 cup): MILLET SMOOTHIE
1/4 cup kodo millet (use any foxtail millet or little millet or barnyard millet)
1 ripe banana
1/2 cup fresh coconut (or use any milk)
4-5 dates (or 2-3 tablespoons jaggery -adjust to taste)
3-4 cardamom (optional)
Ice cubes (optional)
3/4cup Water for cooking millet + 1.5 water for grinding smoothie + extra for soaking

🥣Ingredients: MILLET SALAD
1/2 cup millet (any variety like little millet, foxtail millet, pearl millet, or barnyard millet)
I used little millet/samo.
1 cups water
1/2 cup cucumber, diced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/2 cup yellow bell pepper, diced
1/2 cup red onion, finely chopped
1/2 cup fresh coriander leaves(cilantro) or parsley , chopped
1/3 cup roasted peanuts
1 tablespoon roasted sesame seeds(til/ellu)
🥣For the Dressing:
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 tsp roasted cumin powder
1-2 garlic finely chopped
1 green chilli chopped(spicy chilli or mild spicy)
1/2 tsp Red chili flakes
1/2 tsp salt or to taste
1/2 tsp pepper powder or adjust asper the taste

🥣Ingredients: MILLET BALLS
1 cup little millet (foxtail, kodo, or barnyard)
2 cups water
1/2 tsp salt or to taste
1/2 tsp mustard seeds
1 tsp chana dal
1 tsp urad dal
1/4 cup grated coconut
1 tbsp oil (or ghee)
A few curry leaves
