Easy Homemade Tofurkey Holiday Roast! Gluten Free!
Ingredients:
1 package Extra Firm Tofu, drained and lightly pressed
2 Tablespoons Liquid Aminos or Tamari
1 Tablespoon Oil
1 Tablespoon Tomato Paste
1 Tablespoon Powdered Bouillon (we used Orrington Farms but you could sub 1 rounded teaspoon of Better than Bouillon or miso paste)
2 teaspoons Poultry Seasoning
1 1/4 cup Chickpea Flour AKA Garbanzo Bean Flour
1/2 package microwave rice blend or stuffing of your choice. If you double the recipe - use the entire package.
Olive Oil spray for coating the log.
Directions:
Blend all of the ingredients except for the Rice & Olive Oil spray in a food processor until smooth. Spread mixture out onto a piece of parchment paper into a rectangle (roughly 8X13)
Press rice in the center of the rectangle in a line lengthwise.
Bring long end to long end to form a log. Roll twist the parchment and place in the freezer for at least one hour. When you're ready to cook, unwrap and place on a cookie sheet, spray with oil and bake at 375 degrees for 30-40 minutes or until nicely browned. Let cool slightly before slicing. Enjoy with gravy!
