🌿 Mag nu Shaak (Moong Curry)
Ingredients:
1 cup boiled whole moong (green gram)
1 tbsp oil
½ tsp rai (mustard seeds)
½ tsp jeera (cumin seeds)
Pinch of hing (asafoetida)
1 small onion (finely chopped)
2–3 garlic cloves (chopped)
1–2 green chillies (chopped)
½ tsp red chilli powder
¼ tsp haldi (turmeric)
1 tsp dhaniya (coriander) powder
Salt to taste
½–1 cup water (as needed)
Fresh coriander for garnish
Method:
1. Heat oil in a pan. Add rai, jeera, and hing — let them crackle.
2. Add chopped onion, garlic, and green chillies. Sauté until onions turn soft.
3. Add haldi, red chilli powder, dhaniya powder, and salt. Mix well.
4. Add the boiled moong along with a little water to get the desired consistency.
5. Simmer for 5–7 minutes on medium flame until everything blends well.
6. Garnish with fresh coriander and serve hot.
Serve with: Phulka, thepla, or steamed rice — a light, protein-rich, comforting Gujarati curry.
