Emirati khameer bread is a traditional soft, slightly sweet, and fluffy bread commonly enjoyed in the United Arab Emirates and other parts of the Gulf region. It's a versatile bread that pairs well with savory dishes like stews or meats, as well as with jams or honey for breakfast. The dough is usually leavened with yeast, and it can be either baked or cooked on a griddle.
Here’s a simple recipe for Emirati khameer bread:
Ingredients:
2&1/2 cups all-purpose flour
1/2 teaspoon salt
1 &1/2 tablespoon sugar
2 tablespoon Milk powder
1&1/2 teaspoon Instant yeast
1/4-1/2 teaspoon ground cardamom (optional, but traditional)
3/4 cup warm water
1/2 teaspoon of saffron threads
1 egg (optional, for a richer dough)
Extra flour for dusting
Black and white sesame seeds for sprinkle .
Preparation:
Dough Preparation: Combine flour, sugar, cardamom powder, milk powder, saffron, oil water, yeast, and salt .
Slowly mix the ingredients together, gradually adding warm water as needed, to form a soft dough. You may not need all the water, or you might need a little more, depending on the type of flour used. The dough should be soft but not sticky.
Knead the Dough:
Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes, or until it becomes smooth and elastic.
Let the Dough Rise:
Place the dough in a greased bowl and cover it with a clean kitchen towel or plastic wrap.
Allow the dough to rise for 1-1.5 hours, or until it has doubled in size.
Shape the Bread:
Once the dough has risen, punch it down to release the air.
Divide the dough into small balls (about 8-10 balls depending on the size you want for the bread).
Roll each ball into a flat, round disc about 1/4 inch thick. You can use your hands or a rolling pin to do this. The discs can be about 6 inches in diameter, but you can make them smaller or larger as desired.

Cook the Khameer Bread:

Flip the bread over and cook for another 1-2 minutes on the other side. The bread should puff up slightly and have golden brown spots on both sides.
Repeat this process with the remaining dough balls.
Oven: Preheat the oven at 200C for 10 minutes. Bake at 200C for 8-10 minutes.
Air fryer: Preheat the at 200C for 10 minutes. Bake at 200C for 6-8 minutes.
7. Serve:
Serve your Khameer bread warm, with a side of your favorite dishes or as a snack with honey, cheese, or dips.
