Today we’re driving from Florence, Italy into the beautiful countryside of Tuscany to go to one of the most unique, bizarre, and delicious restaurants in Italy called Podere Belvedere Tuscany.

Here Chef Edoardo specializes in wild game meat. His vision is to bring back ancient recipes, use every part of an animal, be sustainable using local ingredients, and serve incredible Tuscan food. And this was a meal experience like I’ve never had before - from dry aged squab to an aged local deer, and a massive horse steak.

This is not the typical Italian food you think of… but let me tell you, it was incredibly local, unique, and delicious. And that deer ragu was definitely a highlight!

I would highly recommend Podere Belvedere Tuscany if you’re ready for an Italian meal unlike anything else you’ve had. For me it was truly an incredible experience, with fantastic hospitality, delicious food, and unique ingredients.
