Simple Vegetable with Soya Pulao Recipe
Ingredients
1 onion (chopped)
2 tomatoes (chopped)
1 carrot (chopped)
1 potato (chopped)
8–10 beans (chopped)
½ cup soaked peas
50 g boiled soya
10 cashews
1 cup mint
1 cup coriander leaves
10–15 peppercorns
1 small piece ginger
5–6 garlic cloves
5–6 green chillies
1 tsp garam masala
4 spoons ghee
Curry leaves
½ tsp turmeric
Mustard seeds, jeera (optional)
1 cup rice (washed and drained)
Salt to taste
🌱 Preparation
Step 1: Prepare Pulav Masala Paste
In a mixer, blend:
Pudina
Coriander leaves
Green chillies
Ginger
Garlic
Pepper
Make a smooth paste and keep aside.
Step 2: Cooking the Pulav
Heat 2 spoons of ghee in a cooker.
Add garam masala, curry leaves, mustard seeds, jeera (optional), and cashews
Fry for a few seconds until aroma comes.
Add chopped onion, tomato, carrot, potato, beans, soaked peas, and boiled soya.
Add ½ tsp turmeric and sauté for 2–3 minutes.
Add the prepared pulav masala paste. Fry for 2 minutes.
Add 3 cup rice and mix well.
Add 6 cups water (double the amount of rice).
Add salt to taste and stir everything.
Close the cooker lid and cook for 3–4 whistles.
