Ingredients
Meringue
4 egg whites (room temp)
150 g sugar (around 3/4 cups)
1/2 tsp white vinegar / lemon juice or 1/8 tsp of cream of tartar
1/2 tsp of corn starch
Put in oven preheated to 350 degrees F but immediately turn down temp to 200 degrees F
Pastry Cream
350ml of whole milk (1.5 cups)
50g sugar (1/4 cup)
30 grams corn starch (3 tbsp)
4 egg yolks
3 to 5 stalks of lemongrass
Whipped Cream
1/2 cup heavy cream, whipped
Garnish
1/5 cups of citrus segments
lime zest
