Asun Jollof
For the Asun
2700g goat meat
2 tsp salt
2 whole knorr (4 single cubes)
4 cups water
(Airfryer 375 for 12-15min)
½ onion (sliced thin)
65g scotch bonnet (remove seeds and veins to make it less spicy)
½ goat stock
½ water
Pinch of salt
½ cube maggi
For the Jollof:
For the tomato sauce:
6 medium tomatoes (600g)
2 large bell peppers or 3 medium (or 550g)
1-2 scotch bonnet pepper
1/2 small red onion
For the rice:
Extra onion for frying 1 bulb
6 cups rice (1200g) used sella basmati rice
1/2 cup oil
Handful of chopped onion
12 oz tomato paste 327g
1 1/2 cups blended tomato sauce (410g)
2 1/2 teaspoons salt
1 teaspoons crushed knorr chicken cube
1 tablespoon dried thyme
2 bay leaves
1 tablespoon curry powder
1 cup goat meat stock.
½ cup beef stock
2 ½ cups water
