🥣 INGREDIENTS
Cake pan: 8-inch Tube Pan
For the cake batter
4 egg yolks
26 g caster sugar
1 ½ tsp vanilla extract
58 g milk
40 g vegetable oil
80 g cake flour
¼ tsp salt
½ tsp baking powder
3 Earl Grey tea bags
For the meringue
5 egg whites
⅓ tsp cream of tartar
60 g caster sugar
For the Earl Grey-infused whipped cream
500 ml double cream
60 g icing sugar
4 Earl Grey tea bags
1 tsp vanilla extract
¼ tsp salt
Notes:
1. Around 60 g / egg (without shell).
2. Bake in preheated oven at 160℃ fan / 325 ℉ for 35 minutes or an inserted skewer comes out clean.
3. Invert the pan immediately and let the cake cool completely.
