Kuih Bangkit
A cookies that must not miss during Chinese New Year.
Used to make this cookies with mom since was a child, enjoy knocking and baking process those day.
Still remember very clearly the ancient baking method which is using a 4 gallon oil tin as an oven. Then put in 2 inches thick sands inside, on top cover with the tin sheet and burn the charcoal at the bottom and also on top of tin sheet.
Ha..ha..so creative, but it was replaced by electric nowadays.
Ok. Let's see my mom passed on recipe for Kuih Bangkit
Ingredients
Tapioca flours 2½ bowl (260g)
Corn flours ½ bowl (65g)
Fine sugar ½ bowl (70g)
Egg yolks 2 nos
Thick coconut milk 1 bowl (130g - 150g)
Some pandan leaves
