Waterzooi, a 17th century recipe from the city of Ghent, Belgium, is a wonderful dish. Ghent is in the province of Flanders. Originally featuring fish, it has evolved into a chicken dish. The liquid part is so rich and tasty, with the chicken and vegetables making it more than a soup; a hearty meal! Serve with crusty bread and white wine.

1 LB Small Tiny Yellow Potatoes
½ C Sea Salt for boiling tiny potatoes
1 Bunch Parsley
Fresh Tarragon
2 Bay Leaves
3 QTS Chicken Stock
½ Bottle French Dry Vermouth
6 Egg Yolks
10 OZ Crème Fraiche, Clotted Cream, or Heavy Whipping Cream
