Ingredients:
• 300–400 g soya chaap sticks
• 2 medium onions (finely chopped)
• 2 medium tomatoes (pureed)
• 1 green chili (slit)
• 1 tbsp ginger-garlic paste
• 2–3 tbsp curd (well whisked)
• 2 tbsp fresh cream (optional, for richness)
• 2–3 tbsp oil or ghee
• 1 tsp cumin seeds
• 1 bay leaf
Spices:
• ½ tsp turmeric powder
• 1 tsp red chili powder
• 1 tsp coriander powder
• 1 tsp garam masala
• 1 tsp kasuri methi (crushed)
• Salt to taste
Preparation:
1. Prep Chaap:
• If frozen, soak soya chaap sticks in water for 15–20 mins.
• Remove from sticks, cut into pieces, and lightly fry or grill them until golden.
2. Make Masala:
• Heat oil/ghee in a pan, add cumin seeds and bay leaf.
• Add onions and sauté till golden brown.
• Add ginger-garlic paste and cook till raw smell goes.
• Mix in tomato puree and cook until the oil starts separating.
3. Spice it up:
• Add turmeric, red chili powder, coriander powder, and salt.
• Stir for a minute, then add whisked curd slowly (keep stirring so it doesn’t curdle).
4. Cook Chaap:
• Add fried soya chaap pieces, mix well with masala.
• Add ½ to 1 cup water (depending on how much gravy you want).
• Cover and simmer for 7–8 minutes.
5. Finish:
• Add garam masala, kasuri methi, and cream.
• Cook for 1–2 mins more.
6. Serve:
• Garnish with fresh coriander leaves.
• Best enjoyed with butter naan, tandoori roti, or jeera rice.
