Here we tackle breaking down the front shoulder of a deer. Nothing too complicated but they do require some time to trim properly. This is generally how I approach the task and I hope you find it helpful. I've always been meticulous about trimming fat, silverskin, and connective tissue because it yields the best results on the dinner table.
