Ingredients
Til (Sesame Seeds) – 1 cup
Moongfali / Peanut – 1 cup
Gud (Jaggery) – 1 & ½ cup
Ghee – 1 tbsp
Elaichi Powder (Cardamom) – 1 tsp
Mixed Dry Fruits – as needed (finely chopped)
Method (Step by Step
Roast the ingredients
. Heat a pan and roast the til (sesame seeds) on low flame until they become aromatic. Remove and set aside.
. Now roast the peanuts in the same pan until crunchy. Cool them completely.
Make the powder
. Grind roasted peanuts into a coarse powder.
. Grind til into a powder but keep 2 tbsp roasted til aside for later.
. Combine with jaggery
. Add jaggery into the mixer along with the til–peanut powder and pulse for a few seconds to mix everything well.
Cook the mixture
. Heat ghee in a pan.
. Add the til–peanut–jaggery mixture and cardamom powder.
. Cook on low flame until the mixture becomes soft and starts leaving the sides.
Set the gajak
. Transfer the mixture to a greased tray.
. Spread it evenly and sprinkle chopped dry fruits on top.
. Press gently so the dry fruits stick well.
Cool and cut
Allow it to cool completely.
Cut into square or barfi-shaped pieces.
