6 boneless chicken thighs
Flour (to lightly coat chicken)
Tbsp olive oil
Half onion
2 cloves garlic
Handful of sliced mushrooms
Shot of brandy or cognac
Small glass of white wine
Tbsp of double concentrate tomato puree
600ml chicken stock
handful of chopped parsley
