Today I am using the Hawos Billy Oktagon 2 to create this delicious pasta, which has been kindly sent to us by Skippy Grain Mills to test out. You can find this and other handy flour mills on their website: https://skippygrainmills.com.au/?gad_...
For the recipe, I used:
700 grams freshly milled hard white wheat berries (milled to the finest setting)
two capsicums, roasted
1.5 cups leafy greens of your choice (I used broccoli leaves and silverbeet)
320-360 grams of water (depending on how your flour absorbs it, I would recommend adding little by little like in the video and assess the texture).
half a teaspoon of salt per each pasta batch
fine semolina flour for dusting
I dehydrated mine to they would last 2 months at room temperature, stored in an airtight container. If you plan to use them immediately, you can simply store them in the fridge for up to a week. Enjoy!
