Pad See Ew is a very popular type of Thai street food and stir fried noodle dish. It is also common food which Thai people will cook at home because it’s simple and fast uses a few ingredients.
Pad Thai noodles are on the sweet side, while Pad See Ew is salty with soy sauce and has a wonderful smoky, chargrilled flavor which you can easily cook at home!
This recipe is for one person. If you cook for more than one person, I recommend preparing all ingredients ahead of time and cooking each serving one by one per the recipe. It takes a few minutes to stir-fry but it will give you better results. Cooking noodles in large amounts can be difficult.
Ingredients:
8 oz fresh Chow Fun/wide flat rice noodle or 5 oz dried wide rice stick-soak in water at least 2 hrs. or overnight
3 tbsp cooking/vegetable oil
1 cup or 2-3 stems Chinese broccoli or regular broccoli
½ cup or 4 oz. marinated meat or ¼ block-lb tofu
¼ cup water if you use dried noodles only
1 tsp minced garlic
2 eggs
Seasoning sauce:
1 tbsp oyster sauce
2 tsp dark soy sauce
1 tsp soy sauce
1 tsp fish sauce
1 tsp sugar
¼ tsp white/black pepper powder
Marinate meat: 10 – 15 minutes
½ cup or 4 oz sliced meat
1 tsp soy sauce or a pinch of salt
½ tsp cornstarch or a pinch of baking soda
¼ tsp oil (sesame, corn, olive, peanut, or cooking oil)
a dash of ground pepper
Cooking instruction:
STEP 1: Prepare noodles
For fresh noodles: try to separate noodles so that it won’t stick together when you fry it.
For dried noodles: soak it with room temperature for at least 3 hrs. or over night. Drain water and let it dry before cooking
STEP 2: Marinate meat
Marinate your choice of meat for 10 – 15 minutes. For Tofu, cut into small pieces and absorb all the water.
STEP 3: Prepare vegetable
Cut broccoli or Chinese broccoli into small pieces so that it takes less time to cook.
STEP 4: Prepare seasoning sauce
Mix all seasoning sauce together
STEP 3: Cooking
At high heat, add 3 tbsp oil in a wok, add garlic-fry to golden
Add meat until about 80 % cooked, add vegetable, cook until just wilted, add noodles (for dry noodles add ¼ cup of water), add mixed seasoning sauce, stir the mixture until thoroughly combined
Push everything to one side, add eggs in and scramble and let it set or 80% cooked
Flip noodles over egg and stir gently. To get a char taste, leave it for 10 seconds
Serves: 1 person - Serve immediately Served with vinegar and crushed chili
