0:57 - Pour pineapple juice on a small basin or mixing bowl

1:55 - Add food coloring and mix
2:19 - Add the pork to the curing mix
2:33 - Mix the pork with the curing mix
2:45 - Rub the curing mix on all sides of the pork
3:07 - Transfer the pork tocino to a container or a bowl
3:25 - Cover the container with cling wrap
3:41 - Put inside the refrigerator and cure for 3 days
3:56 - Heat cooking oil in a pan then fry the tocino until brown
5:06 - Fry an egg sunny side up

Tocino or pork tocino is one of the popular pork dish for Pinoys but this dish, or maybe just the name was one of the Spanish influence that we inherited. The word tocino means bacon in Spanish.

Pork tocino Ingredients:
1/2 kilo pork shoulder or kasim, slice into ¼ inch thick
1/2 cup brown sugar
1/4 tsp. of red food coloring or annatto powder
2 Tbsp. soy sauce
2 cloves garlic, minced
1/8 cup pineapple juice (optional)
1/2 tsp. salt
