Join us for a full day of camping, hiking, and outdoor cooking at the beautiful Taconic State Park’s Rudd Pond Campground in New York’s scenic Hudson Valley. We stayed at Site 4, a peaceful platform campsite surrounded by lush forest, providing privacy and great views.

Our adventure includes a scenic 3-mile hike along well-marked trails, where we enjoyed the natural beauty, fresh air, and peaceful sounds of the forest before we settled in to cook a delicious Thai meal.

Today’s menu features a flavorful Thai Panang Curry, homemade Prik Nam Pla (a traditional spicy Thai dipping sauce), and sweet Mango Sticky Rice made with jasmine rice from a local Thai grocery store — all cooked outdoors on a small, portable single-burner propane stove.
