Baozi, Steamed Meat Buns 生肉包 | Dim Sum Series 點心系列 | Cook with Pam ASIA TO OZ
Ingredients (Can make 12 buns)
Dough:
400g all purpose flour
240g warm water
1 tsp instant yeast
2 tbsp caster sugar
3 tbsp shortening
Filling:
400g pork leg meat, 80%lean/20%fat
2 tbsp soy sauce
1/2 tsp dark soy sauce
1 tsp sugar
2 tsp ginger paste
2 tsp oyster Sauce
1/4 tsp ground white pepper
1/4 tsp salt
1 tsp chicken stock powder
40g spice water (½ inch of ginger, 3 one-inch sections of leek, 2 star anise, ½ black cardamom pod - optional, 1 tsp of fennel seed, 1 tsp of Sichuan Peppercorns)
1 tbsp sesame oil
1 tbsp cooking oil
40g leek
Bun: 50g of wrapper
Steam: Start with cold water, steam for 10 minutes when you see steam comes out. Leave the lid on for 5 minutes after turning off the heat.

1 汤匙麻油
1 汤匙油
40 克大葱葱白
包:皮50g每个
蒸:冷水上锅,上汽后大火蒸10分钟。关火后必须焖5分钟再揭盖。
