Measuring PH levels and sugar in grapes
There are a couple of essential factors in winemaking: sugar content and acid (PH levels), which give wine freshness and protect wine from microbial spoilage. These, combined with yeast, turn into is alcohol.
Did you know, sugar makes up 10-12% of the grape, and the acidity is around 3-3.5 PH level, which makes a good wine.
Generally, sugar levels are expressed in degree Brix (a scale measuring total soluble solids), representing grams of sugars per 100 grams of juice. Levels between 18 and 24° Brix are desirable, depending on variety and wine style.
