Varutharacha Chicken Curry Recipe | Traditional Kerala Style
In this video, we’ll show you how to prepare Varutharacha Chicken Curry, a flavorful and authentic Kerala-style dish made with a rich roasted coconut masala.
Ingredients used:
Shredded coconut, coconut oil, cardamom, cloves, cinnamon, fennel seeds, pepper, dry red chilli, curry leaves, coriander powder, Kashmiri chilli powder, coconut cuts, onion, ginger, garlic, green chilli, turmeric powder, tomato, salt, chicken, water, and garam masala.
Preparation steps:
Roast the coconut: Heat coconut oil and roast shredded coconut along with cardamom, cinnamon, cloves, fennel seeds, pepper, dried red chillies, and curry leaves until the coconut turns deep brown. Add coriander and Kashmiri chilli powder and roast briefly.
Grind: Let the mixture cool slightly, then grind it into a thick, smooth paste without adding water.
Cook the base: In a pan, heat coconut oil. Add fennel seeds and coconut cuts, followed by onions, curry leaves, green chillies, crushed ginger and garlic. Sauté, then add turmeric powder, chopped tomato, and salt. Cook until soft.
Add chicken & masala: Add chicken pieces, mix well, then stir in the roasted coconut paste. Add water, bring to a boil, and cook for 20–25 minutes.
Finish: Add garam masala and a few curry leaves. Let the gravy thicken and flavors blend beautifully.
