Pad See Ew is one of my favourite stir-fried noodle dishes from Thailand! Thick rice noodles are cooked in an amazing sweet soy-based sauced until charred with Chinese broccoli, thinly sliced meat, and egg.
Having visited Thailand a few times, I can tell you that this is identical to what I tasted while I was there. And the best part about this recipe is that it all comes together in under 20 minutes.
A fast Thai meal, that is delicious to boot! :)

RECIPE
INGREDIENTS
100 g, dry wide Rice Noodles
1/2 cup, thinly sliced Chicken/Pork/Beef
1 tsp, light Soy Sauce
2 tbsp, Canola Oil
2 cloves Garlic, finely chopped
1/2 cup, Chinese Broccoli cut into 2 inch pieces
1 large Egg
For the Sauce
1 tbsp, Dark Soy Sauce
1 tbsp, Light Soy Sauce
1 tbsp, Oyster Sauce
1 tsp, Rice Wine Vinegar
1 tsp, Sugar
METHOD
Soak rice noodles in a bowl full of warm water, until plump and pliable (approximately 10 minutes).
Drain rice noodles and add to a pot of boiling water. Cook for 15 seconds, and then drain into a colander. Set aside.
In a bowl, mix sliced meat with light soy sauce.
In another bowl whisk together ingredients for sauce.
Heat a large frying pan on medium heat, and add garlic. Sauté for 10-15 seconds until slightly fragrant but not browned. Add meat, and cook until slightly browned and cooked through to the middle. Add Chinese broccoli and cook for an additional 30-45 seconds to slightly wilt. Move meat and broccoli to the side of the pan, and crack egg into exposed part of pan. Break yolk, and allow to set for 10 seconds before quickly scrambling. Transfer meat, broccoli, and egg mixture to a plate.
Return frying pan to heat, and wipe down to remove any residue from frying meat. Increase heat to high, and add oil. When oil starts to slightly smoke add cooked noodles, and sauce. Stir to coat noodles completely in sauce.
Then using a spoon, spread noodles to cover the entire base of the frying pan evenly. Allow for bottom of noodles to crisp and char for a few minutes. Stir noodles, and allow other side to crisp and char.
Return meat mixture back to the noodles, and stir to mix. Pour onto a plate and enjoy right away! :)
