Crispy ginger is a easy to make garnish for dishes, or quick fries.
We love crispy ginger for steamed fish or vegetable. I remember during child birth, the confinement lady will make us order a few kilos of old ginger. She would soak, wash, dry and sliced for daily cooking for a month. I remember I had toothache as my body couldn't take the heat as expected. In the end, she has to lessen using in this dishes she cooked as I was having daily toothache.
So it is not everyone cup of tea. But my 93 years young aunt simply loves heaps of ginger. i have to admire seeing her eat it daily.
Here is an easy recipe.
5 to 6 table spoons cooking oil or more (I am just cooking for 2dishes in this video)
Ginger, slice and cut to strips.
2 to 3 pieces of 2 to 3 inch Old ginger. (young ginger, we usually pickled)
Heat up wok with cooking oil. Best to add the ginger strips in while oil is cold.
Fry to dry up the strips. You will see it thinning as it turns lightly golden.
Lower or turn off heat. Allow residue heat to cook the ginger strips without turning black.
Storing:
Store in a bottle with the hot oil. Or side aside the crispy ginger strips, cool it and stored in a bottle without the oil. Both ways are fine.
