I am sharing today the recipe of Meethi Mathri with you, one of the very special Karwa Chauth Recipes.
Meethri mathri is eater during sargi in the morning and for karwachauth pooja in the evening too.
What makes this Meethri mathri different is that they are designed differently.
The mathri is bland but gets its sweetness from a coating of sugar on top.
The mathri is dipped in a sugar syrup of 2 string consistency that gives it a glaze on top and sweetness too.

Meethri Mathri
Preparation time: 20 minutes
Cooking time: 30 minutes
Makes: 4

Ingredients:
For the dough:
3 cups flour
9 tbsp ghee
Water as needed
Oil to fry
For the syrup:
2 cups sugar
1 cup water
Pinch of baking soda
Chopped pistachios to garnish

Method:
Rub the ghee into the flour till it resembles bread crumbs.
Add little water at a time and knead to a stiff dough.
Divide the dough into 4 equal sized balls.
Roll out each bassll into a round mathri of ¼” thickness.
Pinch the mathri and dock with a fork as shown in the video to create a pattern.
Fry the mathris one by one over low heat till pink and crisp. Remove and cool.
Make the syrup by boiling the sugar and water together till it is of 2 string consistency.
Dip cooled mathris one by one in the syrup. Spread the mathris to cool and the sugar to set completely. Garnish with pistachios.
