At this time of year, I LOVE to bake! Here is one of my easy go-to recipes for a delicious shortbread cookie that is fun to make and give! And of course, I LOVE tasting along the way!

Recipe For Lemon/Lavender Shortbread Cookies (Single Recipe)

Cookies:
1-2 tsp dried lavender
zest from 1 whole lemon
1 cup granulated sugar
1 1/2 cups unsalted butter, softened at room temperature (3 sticks)
1/2 tsp lavender extract
1/2 tsp vanilla extract
3 1/2 cups all-purpose flour
1/2 tsp salt

Cookie Icing
1 cup confectioners' sugar
2 tablespoons milk
1 Tbsp lemon juice (fresh is best!)

Preheat the oven to 330-350°F - (depending on how how your oven runs)

In food processor or mortar & pestle, pulse or grind the sugar, dried lavender, and lemon zest until buds are incorporated. Start off with just a bit of the sugar if grinding.
Add the butter and lavender to lemon sugar in a bowl and mix, then beat on medium speed until just combined. Add in vanilla and lavender extracts and mix until combined.
Add flour and salt, mix at low speed until well blended. The mixture will be crumbled and soft.
Form into disk, wrap in plastic, and chill for 20 minutes.
Roll out dough to 1/2 inch thick and cut into 2 to 3 inch rounds.
Bake for 20 to 25 minutes until edges just begin to brown. CHECK at about 15 minutes.
Cool to room temperature.

In a small bowl, whisk together ingredients for the frosting. Dip the cooled cookies in the frosting, then set aside to set. Double dip for thicker and lighter icing result.
