Buttermilk Cornbread

2 cups Yellow Cornmeal
1 cup all purpose Flour
2 Tablespoons Baking Powder
2 teaspoons Salt
1 teaspoon Baking Soda
Whisk together well then add:
2 cups Buttermilk
1 cup Milk
2 Eggs
Stir together but don't overmix.
heat 1/4 cup oil or shortening in a cast iron skillet with 2 teaspoons bacon grease for extra flavor. pour into mixture leaving a little in the skillet. Heat skillet on stovetop then pour mixture in to sear it and insure a crispy crust. bake 35 to 40 minutes at 425 F until center is done. you will know when you push in the top of the Cornbread and it springs back a bit.
