Welcome to one of Mexico's most beloved and comforting guisos! This isn't your typical chocolate-based mole; Mole de Olla is a deeply savory, rich red broth stew, filled with tender beef and loads of fresh vegetables that will help you achieve your January healthy eating challenge. Today, we're taking it to the next level by making homemade Chochoyotes—little corn masa dumplings that soak up the incredible broth—and the ultimate chef's snack: a humble yet luxurious taco filled with bone marrow. This is a celebration of pre-Hispanic and mestizo cuisine, which I hope you'll enjoy.
Ingredients for the Broth:
4 lb Beef shank
1/2 Onion
1 Garlic cloves
Water to cover & salt
Ingredients for the soup base:
2 Guajillo peppers
1 Ancho pepper
1 Pasilla pepper
1-2 Garlic cloves
2 Tomatoes
1/2 Onion
Vegies:
2 Potatoes
2 Carrots
2 Zucchinis
3 oz Green beans
3 Corns
3-4 Xoconostles (if found)
2 Chayotes (if you like them)
Ingredients for Chochoyotes:
1 c Masa Harina
1 1/4 c Warm water
1/2 tsp Salt
1 tsp Epazote
Enjoy a bone marrow taco with a fresh tortilla, salt, and lime.
